Cold Somen with Tomato & Avocado

- Dried somen noodles
- 100g (about 2 bundles)
- Tomato, diced
- 100g
- Avocado, diced
- 100g
- Lemon slices

- Basil leaves

- Water
- 40ml
- Olive oil
- 1 tbsp
- Lemon juice
- 1 tbsp
Directions
Cook somen noodles according to the package instructions.
Once noodles are cooked, drain and rinse under cold running water. Drain well.
Mix (A) in a medium bowl. Add (2), tomato and avocado and mix well.
Divide into two serving bowls. Garnish with lemon slices and basil.
