Pork and Sweet Potato Stir-fry

- 200g thinly sliced pork, cut into bite-sized pieces
- 100g Japanese sweet potato, cut into chunks
- 50g shimeji mushrooms, stemmed and separated
- 3 tbsp Teriyaki Soy Sauce
- Sesame seeds, optional
- Vegetable oil, as needed
Directions
Soak sweet potato pieces in the water and drain well.
Heat the oil in a pan and stir-fry pork until browned. Add sweet potatoes and shimeji mushrooms and stir-fry. Cover and steam on low heat for about 5 minutes. Mix in Teriyaki Soy Sauce.
Serve on a plate and sprinkle sesame seeds (optional).
